Tofu Scramble

Serves 2

What you need:
1 tsp. olive oil
½ onion, chopped
½ green pepper, chopped
2 scallions, chopped
16 ounces firm tofu, crumbled
Soy sauce
Black pepper

What you do:
Heat oil.
Add onion, green pepper and scallions; sauté for 2 minutes.
Add tofu; sauté for 2 minutes.
Add soy sauce, turmeric and pepper to taste; cook for 1 minute.
