Breakfast burrito recipe
What you need:
1 teaspoon olive oil
½ red pepper, diced
¼ yellow onion, diced
2 eggs plus 2 whites, beaten together
Ground black pepper
2 whole-wheat tortillas
What you do:
Add oil to pan over medium-high heat.
Add vegetables and cook for three minutes.
Add eggs. Scramble until done.
Add pepper to taste.
Microwave tortillas for 30 seconds.
Wrap the eggs in the tortillas.
What you get:
254 calories, 1.9 g saturated fat, 212 mg cholesterol, 518 mg sodium, 4.8 g fiber
